Guatemalan Corn Harvest

Corn is a staple of the Guatemala diet, typically finding its way into daily meals as tortillas. The cobs are left to dry on the stalks long into the season, and when are finally harvested are shucked, divided amongst family members and then placed on the roofs of their homes to dry further.

Eventually when the kernels are completely dry they are removed from the cob stored for later when they will be ground into a paste and made into tortillas as required.
